Ingredients

–  1 tbsp olive oil

–  ½ tbsp ginger

–  ¼ cup yellow onion

–  ¼ cup red bell pepper

–  ¼ cup yellow bell pepper

–  ¼ cup carrots

–  ⅛ tbsp garlic powder

–  Salt and pepper to taste

–  ½ cup cauliflower, grated

–  2 Eggs

Instructions:

1. Heat olive oil in a large skillet over medium heat.

2. Add ginger, onion, red bell pepper, yellow bell pepper, carrots, garlic powder, salt, and pepper. Cook until veggies are tender.
