Ingredients

–  ½ small head cauliflower

–  1 Egg + 1 Egg White

–  Salt and Black Pepper

–  A few drops of olive oil

–  1 clove garlic

–  4 0z chicken breast

–  1 tbsp olive oil

–  1 tbsp grated fresh ginger

–  ½ red bell pepper

–  1 Scallion

–  ⅛ tbsp Oregano

–  ½ tbsp reduced sodium soy sauce

Instructions:

1. Begin by shredding the cauliflower using a food processor or grater to create small rice-like pieces.

2. In a small bowl, mix together the egg, egg white, salt, and black pepper.

3. Heat a few drops of olive oil in a large skillet over medium heat. Add the minced garlic and cook for 1-2 minutes.
