Ingredients
– ½ medium carrot
– 1 egg
– 1 medium banana
– 2 0z greek yoghurt
– ¼ tbsp baking powder
– ¼ cup oat flour
– ¼ tbsp ground cinnamon
– ½ tbsp vanilla extract
– Salt
– 1 tbsp greek yoghurt
– Ground cinnamon
Instructions:
1. Grate the carrot and mash the banana in a bowl.
2. Add the egg, greek yoghurt, baking powder, oat flour, cinnamon, vanilla extract, and a pinch of salt to the bowl and mix until well combined.

3. Heat a non-stick pan over medium heat and grease with cooking spray.
4. Pour ¼ cup of the pancake batter onto the pan and cook until bubbles form on the surface, then flip and cook for another 1-2 minutes.

5. Repeat with the remaining batter.
6. Serve the pancakes topped with a dollop of greek yoghurt and a sprinkle of cinnamon.
