Ingredients

–  1 cup carrots

–  Salt

–  2 hard boiled eggs

–  ¼ cup canned or boiled peas

–  1 tbsp extra virgin olive oil

–  1 tbsp lemon juice

–  ½ tbsp fresh parsley

–  1 tbsp parmesan cheese

Instructions:

1. Peel and grate 1 cup of carrots and season with a pinch of salt.

2. Chop 2 hard boiled eggs and add to the carrots.

3. Add ¼ cup of canned or boiled peas to the mixture.

4. In a separate bowl, whisk together 1 tbsp of extra virgin olive oil, 1 tbsp of lemon juice, and ½ tbsp of fresh parsley.
