Carrot Crust Pizza

Ingredients
– 8 0z grated carrot
– ¼ cup grated low fat mozzarella
– 1 egg
– 1 tbsp olive oil
– 7 0z ground chicken
– ¼ tbsp cumin powder
– ¼ tbsp chilli powder
– ¼ tbsp ground ginger
– ¼ tbsp ground cilantro
– ¼ tbsp paprika
– Salt and black pepper
– ¼ tbsp garlic powder
– ¼ medium green bell pepper
– ¼ medium red onion
– 2 0z tomato sauce
– ½ 0z Grated low fat mozzarella
Instructions:
1. Preheat the oven to 400°F.
2. In a bowl, mix together grated carrot, ¼ cup grated low fat mozzarella, egg, and olive oil to make the crust mixture.

3. Press the crust mixture onto a pizza stone or baking sheet to form a crust.
4. Bake the crust for 20 minutes until it is slightly crispy.
5. In a skillet, cook ground chicken with cumin powder, chili powder, ginger, cilantro, paprika, salt, black pepper, and garlic powder until browned.

6. Spread tomato sauce over the crust, then top with cooked chicken, green bell pepper, red onion, and remaining ½ oz grated low fat mozzarella.
7. Bake in the oven for an additional 10-12 minutes until cheese is melted and bubbly.
8. Slice and serve hot.
