Ingredients

–  1 0z walnut halves

–  ⅓ cup whole wheat flour

–  ⅓ cup old fashioned oats

–  ¼ tbsp baking powder

–  ¼ tbsp ground cinnamon

–  Salt

–  A pinch of ground ginger

–  2 tbsp melted coconut oil

–  2 tbsp honey

–  ½ cup grated carrot

Instructions:

1. Preheat oven to 350°F and line a baking sheet with parchment paper. 

2. In a food processor, pulse the walnut halves until finely ground.

3. In a large bowl, mix together the ground walnuts, whole wheat flour, oats, baking powder, cinnamon, a pinch of salt, and ground ginger. 

4. In a separate bowl, mix together the melted coconut oil and honey. 

5. Gradually add the wet ingredients to the dry ingredients and mix until well combined. 

6. Fold in the grated carrot until evenly distributed throughout the dough.

7. Using a cookie scoop, scoop out dough onto the prepared baking sheet. 

8. Flatten each cookie slightly with the back of a fork. 

9. Bake for 12-15 minutes or until cookies are golden brown. 

10. Allow to cool before serving.
