Carrot bread

Ingredients
– 1 ½ cup whole wheat flour
– 1 tbsp baking powder
– 1 tbsp baking soda
– 1 tbsp ground cinnamon
– ½ tbsp ground nutmeg
– A pinch of Salt
– 4 0z grated carrot
– 2 egg whites
– 1 tbsp melted coconut oil
– 1 tbsp vanilla extract
– 2 0z coconut sugar
– 3 0z greek yoghurt
– ½ cup milk
Instructions:
1. Preheat the oven to 350F and grease a loaf pan.
2. In a mixing bowl, combine the whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

3. In a separate bowl, mix together the grated carrot, egg whites, coconut oil, vanilla extract, coconut sugar, greek yoghurt, and milk.
4. Slowly add the wet ingredients into the dry ingredients, stirring until just combined.

5. Pour the batter into the prepared loaf pan and bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
6. Allow the bread to cool before slicing and serving.
