Ingredients
– 2 slices whole wheat bread
– 1 tbsp olive oil
– 2 0z spinach
– 2.5 0z chickpeas, canned or boiled
– 1 tbsp capers
– 1 garlic
– 1 tbsp olive oil
– Salt and black pepper
Instructions:
1. Preheat the oven to 350°F.
2. Cut the whole wheat bread into small cubes and toss them in 1 tbsp of olive oil. Spread them onto a baking sheet and bake for 10-12 minutes, until crispy.

3. In a large salad bowl, combine the spinach, chickpeas, capers, and the toasted bread cubes.
4. In a small bowl, whisk together the minced garlic, 1 tbsp of olive oil, salt, and black pepper. Pour this dressing over the salad and toss well to coat.
