Ingredients
– 1 tbsp olive oil
– 1 garlic clove
– ¼ cup onion
– ⅛ cup carrot
– 1 tbsp celery
– ⅛ cup green bell pepper
– 1 cup cabbage
– ½ tbsp tomato paste
– ½ cup low sodium vegetable or chicken broth
– ½ cup water
– ⅛ tbsp salt
– ⅛ tbsp ground cumin
– ⅛ tbsp ground coriander
– ¼ cup low sodium red beans
– ½ tbsp cilantro
– 1 tbsp lime juice
Instructions:
1. Heat olive oil in a pot over medium heat.
2. Add minced garlic, chopped onion, carrot, celery, and green bell pepper. Saute until vegetables are soft.

3. Stir in chopped cabbage and cook for 5 minutes.
4. Add tomato paste, vegetable or chicken broth, water, salt, ground cumin, and ground coriander. Bring to a boil, then reduce heat and simmer for 20 minutes.

5. Stir in red beans and cook for another 5 minutes.
6. Remove from heat and stir in cilantro and lime juice before serving.
