Breakfast egg muffins

Ingredients
– 1 0z spinach
– ½ medium red bell pepper
– ½ medium yellow bell pepper
– 6 cherry tomatoes
– 3 Eggs + 2 Egg Whites
– Salt and Black Pepper
– ¼ tbsp Oregano
– ½ 0z Feta Cheese
Instructions:
1. Preheat your oven to 350 degrees F.
2. In a large mixing bowl, whisk together the eggs, egg whites, salt, pepper, and oregano.
3. Chop the spinach, red bell pepper, yellow bell pepper, and cherry tomatoes into small pieces.

4. Add the chopped vegetables to the egg mixture and stir well.
5. Grease a muffin tin with cooking spray and pour the egg and vegetable mixture evenly into each cup.
6. Crumble the feta cheese on top of each muffin.

7. Bake in the preheated oven for 20-25 minutes, or until the egg muffins are set and slightly golden brown on top.
8. Allow the muffins to cool slightly before removing from the tin and serving.
