Ingredients

–  2 medium bananas

–  2 eggs

–  2 0z coconut sugar

–  ¼ cup melted coconut oil

–  4 0z greek yoghurt

–  1 ½ cup whole wheat flour

–  1 tbsp baking powder

–  ½ tbsp baking soda

–  1 0z cornstarch

–  A pinch of salt

–  1 tbsp lemon zest

–  1 cup blueberries

Instructions:

1. Preheat the oven to 350°F and prepare a loaf pan by greasing it with coconut oil or lining it with parchment paper.

2. In a mixing bowl, mash the bananas until smooth. Add in the eggs, coconut sugar, melted coconut oil, and greek yoghurt. Mix until well combined.

3. In a separate bowl, sift together the whole wheat flour, baking powder, baking soda, cornstarch, and salt. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.

4. Gently fold in the lemon zest and blueberries until evenly distributed throughout the batter.

5. Pour the batter into the prepared loaf pan and smooth out the top. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

6. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Slice and enjoy!
