Ingredients
– 1 tbsp extra virgin olive oil
– ⅛ tbsp dried oregano
– ⅛ tbsp garlic powder
– Salt and black pepper
– ½ cup Romaine lettuce
– ⅓ cup Tomato
– ¼ cup can black beans
– ¼ cup yellow bell pepper
– ¼ cup avocado
– ¼ cup red onion
– 1 tbsp lemon juice
– 1 tbsp extra virgin olive oil
– ¼ tbsp mustard
Instructions:
1. In a small bowl, whisk together 1 tbsp extra virgin olive oil, dried oregano, garlic powder, salt, and black pepper.
2. Marinate 1 cup of cooked and shredded chicken breast in the mixture for at least 30 minutes.

3. In a separate bowl, mix together Romaine lettuce, diced tomato, black beans, diced yellow bell pepper, diced avocado, and diced red onion.
4. In a small jar, combine lemon juice, 1 tbsp extra virgin olive oil, mustard, salt, and black pepper. Shake well to combine.

5. Pour the dressing over the salad and toss to combine.
