Ingredients

–  1 ½ cup whole wheat flour

–  1 tbsp baking powder

–  1 tbsp Baking Soda

–  A pinch of Salt

–  1 tbsp ground ginger

–  2 egg whites

–  ¼ cup melted coconut oil

–  ¼ cup milk

–  2 0z coconut sugar

–  1 0z pear puree

–  1 tbsp lemon zest

–  4 0z Beetroot Grated

–  5 walnut halves

Instructions:

1. Preheat oven to 350°F (175°C) and grease a loaf pan.

2. In a mixing bowl, combine whole wheat flour, baking powder, baking soda, salt, and ground ginger.

3. In another bowl, whisk together egg whites, melted coconut oil, milk, coconut sugar, pear puree, and lemon zest.

4. Pour the wet ingredients into the dry ingredients and mix until well combined.

5. Gently fold in grated beetroot and chopped walnuts.

6. Pour the batter into the greased loaf pan and bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.

7. Allow the bread to cool before slicing and enjoying!
