Ingredients
– 1 large beetroot
– 1 0z Feta Cheese
– ½ tbsp parsley
– ¼ cup chickpeas
– 1 tbsp lemon juice
– 1 tbsp extra virgin olive oil
– 1 garlic
– Salt and black pepper
Instructions:
1. Preheat the oven to 400°F.
2. Wash and peel the beetroot, then chop it into small cubes.

3. Place the beetroot cubes on a baking tray, drizzle with olive oil, sprinkle with salt and pepper, and roast in the oven for 25-30 minutes or until tender.
