Beef White Mashed Cauliflower

Ingredients
– 1 small head cauliflower
– 2 tbsp milk
– 2 tbsp parmesan cheese
– Salt and black pepper
– 1 tbsp olive oil
– 4 0z beef bites
– ¼ medium red onion
– 1 garlic
– ½ medium carrot
– 1 tbsp tomato paste
– 3 0z diced tomatoes
– 3 tbsp low sodium beef broth
– ¼ tbsp thyme
– ¼ tbsp rosemary
Instructions:
1. Cut the cauliflower into small florets and boil in salted water until tender. Drain and mash with a potato masher or blend in a food processor until smooth. Stir in the milk, parmesan cheese, salt, and black pepper. Keep warm.

2. In a pan, heat the olive oil and add the beef bites. Cook until browned on all sides, then remove from the pan and set aside.
3. In the same pan, add the red onion, garlic, and carrot. Cook until softened, then add the tomato paste and cook for another minute.

4. Add the diced tomatoes, beef broth, thyme, and rosemary. Bring to a simmer and add the browned beef bites back into the pan. Cook until the sauce has thickened slightly.
5. Serve the beef mixture over the warm cauliflower mash. Enjoy!
