Beef Pancakes

Ingredients
– 1 Egg
– 1 tbsp mashed banana
– ½ cup oat flour
– 1 0z beetroot puree
– 1 tbsp greek yoghurt
– ½ tbsp baking powder
– A pinch of salt
– ½ tbsp vanilla extract
– 1 tbsp honey
Instructions:
1. In a bowl, whisk together the egg, mashed banana, oat flour, beetroot puree, greek yoghurt, baking powder, salt, vanilla extract, and honey until well combined.

2. Heat a non-stick pan over medium heat and lightly grease with oil or butter.
3. Pour a small amount of the batter onto the pan to form a pancake and cook for 2-3 minutes on each side, or until golden brown.

4. Repeat with the remaining batter to make more pancakes.
5. Serve warm with your favorite toppings such as maple syrup, sliced fruits, or greek yoghurt.
