Beef And Cauliflower Pie

Ingredients
– 7 0z cauliflower florets
– 2 tbsp milk
– 1 tbsp cream cheese
– Salt and black pepper
– ¼ medium red onion
– 1 tbsp olive oil
– ¼ medium carrot
– 1 garlic
– 4 0z ground lean beef
– 1 0z frozen peas
– 1 0z frozen corn
– Salt and black pepper
– Parsley
Instructions:
1. Preheat the oven to 375°F (190°C).
2. Steam the cauliflower florets until tender. Blend in a food processor with milk and cream cheese until smooth. Season with salt and pepper to taste.

3. In a skillet, sauté the red onion, carrot, and garlic in olive oil until softened. Add the ground beef and cook until browned. Stir in the peas and corn, season with salt and pepper, and cook for a few more minutes.
4. Transfer the beef mixture into a baking dish. Top with the cauliflower puree and smooth out evenly.

5. Bake in the oven for 25-30 minutes until the top is golden brown.
6. Serve hot, garnished with fresh parsley.
