Baked Sole With Potatoes

Ingredients
– 7 0z baby potatoes
– 1 tbsp olive oil
– Salt and black pepper
– ½ tbsp lemon zest
– 6 0z sole
– Drizzle of olive oil
– ½ tbsp lemon zest
– 1 tbsp fresh dill
– 1 tbsp lemon juice
Instructions:
1. Preheat the oven to 400°F.
2. Wash the baby potatoes and cut them into halves. Place them in a bowl and drizzle with olive oil. Season with salt, black pepper, and lemon zest. Mix well to coat the potatoes evenly.

3. Place the seasoned potatoes on a baking tray and bake in the preheated oven for about 20 minutes or until they are golden brown and tender.
4. Meanwhile, season the sole fillets with salt, black pepper, lemon zest, and fresh dill. Drizzle with olive oil and lemon juice.
5. Place the seasoned sole fillets on top of the cooked potatoes on the baking tray.
