Avocado Toast with Egg And Radish

Ingredients
– 1 hard boiled egg
– 2 tbsp greek yoghurt
– 1 tbsp dijon mustard
– Salt and black pepper
– 1 medium green onion
– 1 0z avocado
– ½ tbsp low fat mayonnaise
– 2 slices whole wheat bread toasted
– 1 radish
– Beet leaves
Instructions:
1. In a small bowl, mash the hard boiled egg with a fork. Add in the greek yoghurt, dijon mustard, salt, and black pepper. Mix well to combine.

2. Finely chop the green onion and add to the egg mixture.
3. In another small bowl, mash the avocado with the low fat mayonnaise. Spread the avocado mixture onto the toasted whole wheat bread slices.
4. Top the avocado toast with the egg mixture.

5. Thinly slice the radish and sprinkle on top of the toast. Garnish with beet leaves.
