Ingredients

–  1 cup water

–  ⅛ tbsp salt

–  ¼ cup quinoa

–  5 cherry tomatoes

–  ½ cucumber

–  ½ avocado

–  1 hard boiled egg

–  1 tbsp creme fraiche

–  ½ tbsp dijon mustard

Instructions:

1. In a small saucepan, bring the water and salt to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let sit for 5 minutes, then fluff with a fork and let cool.

2. While the quinoa is cooking, chop the cherry tomatoes, cucumber, avocado, and hard boiled egg into bite-sized pieces. 

3. In a small bowl, mix together the creme fraiche and dijon mustard to make the dressing.
