Apple Oatmeal Cookies

Ingredients
– ½ cup whole wheat flour
– 1 cup old fashioned oats
– ¼ tbsp baking powder
– ½ tbsp ground cinnamon
– A pinch of ground nutmeg
– Salt
– 1 tbsp melted coconut oil
– 1 egg white
– ½ tbsp vanilla extract
– 2 tbsp honey
– 3 tbsp milk
– ½ medium red apple
Instructions:
1. Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
2. In a mixing bowl, combine the whole wheat flour, oats, baking powder, cinnamon, nutmeg, and a pinch of salt.

3. In a separate bowl, mix together the melted coconut oil, egg white, vanilla extract, honey, and milk.
4. Peel and dice the apple into small pieces.
5. Add the wet ingredients to the dry ingredients and stir until well combined.
6. Fold in the diced apples.

7. Scoop the cookie dough onto the prepared baking sheet, leaving space between each cookie.
8. Bake for 12-15 minutes or until the edges are golden brown.
9. Allow the cookies to cool before serving.
