Ingredients

–  ½ cup oat flour

–  ¼ cup walnut flour

–  ¼ tbsp cinnamon

–  ¼ tbsp baking powder

–  1 tbsp chia seeds

–  1 large egg

–  1 large egg white

–  1 0z yoghurt

–  2 tbsp vegetable oil

–  2 tbsp honey

–  ½ tbsp vanilla extract

–  1 small apple

–  1 banana, mashed

Instructions:

1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.

2. In a large bowl, mix together the oat flour, walnut flour, cinnamon, baking powder, and chia seeds.

3. In a separate bowl, whisk together the egg, egg white, yoghurt, vegetable oil, honey, and vanilla extract.

4. Gradually add the wet ingredients to the dry ingredients and mix until just combined.

5. Fold in the mashed banana and diced apple.

6. Spoon the batter into the muffin tin, filling each cup about ¾ full.

7. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

8. Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
